Couscous Salad

We eat a lot of couscous at our house. My daughter loves it, it is very easy to make and using up the leftovers is easy for us. I often make more than we need for our meal so that I can make this salad with the leftovers.

This recipe is mine - it was made by trial and error. The things we tried and liked stuck and this is the end result. It is goes really well with our homemade burgers in the summer and with turkey for Thanksgiving or Christmas Dinner. It is a great salad for a Bar-B-Que, picnic or even for a fancy dinner.


This version is vegetarian but you can easily add some chopped sausage, ham or chicken if you prefer. It can be served warm or cold.

This recipe goes together very quickly and is very adaptable. You can add or take out any vegetables that you like. If you want to try an entirely different flavour just swap out the Tomato & Oregano dressing  for a different kind.

Ingredients:
2 cups Couscous, cooked
1/4 cup chopped cucumber
1/4 cup sweet peppers, chopped (orange, yellow, red)
1/4 cup celery, chopped
1/4 cup tomatoes, chopped
1/4 cup Kraft Sundried Tomato & Oregano Feta Cheese, crumbled (optional)
1/8 - 1/4 cup Kraft Sundried Tomato & Oregano Salad Dressing (add to taste)


Directions:
1. In a large bowl combine, couscous, and chopped vegetables. Mix well.
2. Add crumbled feta cheese and dressing. Mix again.
3. Serve.
  *You can put it in the fridge for a little while for all the flavours to combine.
