These
are one of my most favorite cookies to make. We usually only make them
at Christmastime or for a special occasion because otherwise I would eat WAY too many of them.
They are a healthier cookie so I guess having a few extra is not all
that bad.
They
are very easy to make and we also had all the ingredients in the
cupboard already so I did not have to go out and get anything special to
make them with. They are excellent warm from the oven and just as tasty
the next day.
I
initially got the recipe from a Cooking Light magazine that I had
picked up in the checkout line one day. They looked easy to make and I
thought that they would be a nice change from the regular shortbread
that we usually make.
We
used our KitchenAid mixer to do the heavy work for us. We started by
creaming the butter & sugar together and then added the dry
ingredients and then the water.

I LOVE Snickerdoodles!!! I loved them before I even knew what they were called.
I tried them for the first time ever on a trip to Leetsdale, PA many years. The trip was a 2 week long business trip and I certainly did not know what I was going to do when I was not in training or working on the getting the information ready for an upcoming operating system conversion. Leetsdale is located by Pittsburgh, PA, I am from Alberta. I didn’t know the area and only knew a handful of the people that worked at the office there. I was a little worried going to an unfamiliar place for so long.
Turns out that I had nothing to worry about. The business part of the trip went really well and I got to spend sometime with some wonderful people there too.
Some of those people became friends that I will have my whole life. A woman who was to become one of those lifelong friends, took me on a tour through Amish Country and to see some wonderful shops. I had a great time seeing the countryside, doing some shopping and getting to know her better. We were thick as thieves by the end of the day. I got to have dinner with another good friend while I was there too. We shared some good food & laughs together. I even got to watch some football, the game in 1996 that put the Steelers in the Superbowl.
Lunch was catered into the office while we were all working and one day there was this delicious looking plate of cookies. I tried one and they were amazing. I had to ask what they were called and spent a lot of time during the following years trying out recipes looking for the right one.
I subscribe to the Robin Hood newsletter and one day the recipe appeared in my email inbox. I wasn’t sure if it was “The ONE” but I didn’t waste any time trying it out. This is a great recipe to make with kids. My daughter helped by rolling the dough balls in the sugar/ cinnamon mix and was very excited to lick her fingers when she was done!
It is “The ONE”. The recipe I have been searching for. The cookies are light & sugary, puffed up in the middle and oh so delicious!
